Biang Biang Noodles

Today we are making a unique hand-pulled noodle recipe that you find it in Shanxi province. It is called – You Po Che Mian (油泼扯面) also know as Biang Biang noodles. Biang Biang is an onomatopoeia that describes the sound when the noodle hits the working surface. This recipe has more than 3000 years of history. Just a few basic ingredients but the taste and the texture are incredible. It is chewy, also soft at the same time. It is one of those recipes that I will make when I miss china. The authentic little touch cures my homesickness.
