Easy Vegetable Fried Rice

Fried rice is one of the easiest dishes to make. Below are 5 tips for you to make better-tasting fried rice.

  • First, always combine the seasonings ahead of time. Fried rice is quick and easy. Once the heat is on, everything can be done in 5 minutes. You don’t have time to rummage around.
  • Maximize the fragrance of the aromatics by sauteing them until golden brown; that will bring your fried rice to a different level.
  • Make sure your rice is not too wet because nobody wants soggy and mushy fried rice. Therefore, it is best to use leftover rice. If you don’t know how to cook rice, you can click here for the demo.
  • Use high heat when stirring rice because that will give you the most important ingredient – Wok Hay (锅气). Wok hay is also known as the cornerstone of Cantonese stir fry cooking; it refers to a complex smoky aroma and taste that are created by properly cooking the food in a well-seasoned carbon steel wok over high heat. However, some home cooking stoves are not powerful enough that even if you use the highest heat, you still can not achieve the wok hay effect. In that case, you can cook smaller portions at a time.
  • Last, use large cookware so you have a lot of room to stir and toss, which ensures every grain is seared properly. A carbon steel wok is perfect because it handles high heat and the dome shape makes easy no spilling tossings. If you don’t have a wok, don’t worry, just use the largest saute pan or skillet that you have.

INGREDIENTS

  • 1.5 tbsp of soy sauce
  • 1 tbsp of soybean paste, can be replaced by Korean Doenjang
  • 1 tbsp of hoisin sauce
  • 1-2 tsp of curry powder, depending on your taste
  • 1/2 tsp of turmeric powder
  • 2-3 tbsp of cooking oil
  • 2/3 cups of diced onion
  • 2 tbsp of garlic
  • 1 tsp of minced ginger
  • 2 cups of mixed and diced vegetables(I used carrot, broccoli, and bell pepper)
  • 2.5 cups (350g) of leftover rice,
  • 3 tbsp of diced scallion
  • 2 tsp of toasted sesame seeds

INSTRUCTIONS

In a sauce ball, combined the soy sauce, hoisin sauce, soybean paste, curry powder, and turmeric powder. Mix well and set it aside. I know curry powder is not a Chinese ingredient, but I feel like using it. That is the spirit of making fried rice “use whatever you have and whatever you want.”

Add a big drizzle of oil to your wok and toss in the diced shallots. Stir it over medium-low heat until slightly golden.

Add garlic and ginger. Keep stirring until all the aromatics are caramelized. Garlic burns fast, that’s why we added it a little later.

Add the diced&mixed vegetables, then stir over medium-low heat for a couple of minutes or until the vegetables are cooked through.

Add the rice and stir over high heat for a few minutes or until you can see the grains jumping at the bottom of the wok.

Add the sauce and keep mixing until well combined. Sprinkle some diced scallion and toasted sesame seeds. Mix well and serve.
